The peasant tradition
An excellent table cheese; it has a compact curd, tender with tiny holes. Pecorino is used for making a variety of dishes from appetizers to second courses. Excellent with fresh or grilled seasonal vegetables. It has a full bodied, delicate flavor. The black rind brings to mind the way farmers used to protect the wheel with olive oil marc and ashes to prolong its conservation.
