Ripened cheese, with a white curd
After a first ripening of about one month, the cheese is left to ripen on walnut leaves for approximately another 30 days, giving the cheese a strong aroma when the ripening process is finished.
The cheese is then treated on the surface with charcoal gifting it an elegant black appearance.
