A flower of cheese

It is a mixed cheese, produced with cow and sheep milk and with the addition of vegetable rennet. The rennet used is extracted from the wild thistle flower, of the genus Cynara cardunculis, which contains the enzymes suitable for making this appetizing product. The use of vegetable rennet is reserved for typical and traditional productions. It is a very ancient system, probably preceding animal rennet, and today it has been recovered precisely to meet the requests of vegetarians or ‘flexitarians’ (people who want to reduce the consumption of foods linked to the death of animals).
